Vino di uve stramature
A part of the grapes wilted in the apposite room, which are not used to create the SAN VINCENZO wine, will wilt till Christmas. In that moment grapes will be pressed and the obtained must will be very concentrated and rich in sugar. Reached 17% alcohol content, the fermentation naturally stops and it keeps intact tens of sugar gr/lt. A long maceration with skins follows. The ageing is in steel for at least two years and in bottle for one year. It is a natural sweet very pleasant wine, with a strong tannic note, which makes it a easy to drink, well balanced, complex and intense “Passito”.
